8 Minute Light  Fruity Pie Recipe
This is easy to make and tastes so good. Other flavors of jello and fruit could be used.

Ingredients
  • 1 pkg. 3oz. jello, any flavor
  • 2/3 cup boiling water
  • 2 cups ice cubes
  • 3 1/2 cups or 1 8oz container non dairy whipped topping, thawed
  • 1 cup diced fruit
  • 9 inch graham cracker crumb crust

Directions
  1. Dissolve jello completely in boiling water, stirring about 3 minutes. Add ice cubes and stir constantly until jello is thickened about 2 to 3 minutes.
  2. Remove any unmelted ice.
  3. Using wire whip, blend in whipped topping and whip till smooth. Fold in fruit and chill, if necessary until mixture will mound.
  4. Spoon into pie crust. Chill 2 hours.
  5. I have used strawberries and strawberry flavored jello

Oh this does sound good. I am going to play around with lighting it up a bit as everyone in this house is supposed to be watching our weight. You notice I said "supposed" didn't you? LOL
