How to make it

  • Blitz down lime leaves, ginger, green chilli, garlic, lemongrass, shallots, and fish sauce in a blender until paste consistency
  • In a hot pan, fry off the chicken until browned
  • Add paste and cook for a further 3-4 minutes
  • Add green bell pepper and bamboo shoots
  • Add coconut milk and stock, and simmer for 30 minutes
  • Finish by adding the coriander
  • Serve with rice
