Thai Chicken Curry

- 500g chicken breast shopping list
- 5ml fish sauce shopping list
- 1 Thumb Sized Piece of ginger shopping list
- 2 green Chillies shopping list
- 1 green bell pepper, cut into 2cm pieces shopping list
- 3 cloves garlic shopping list
- 2 Pieces lemongrass shopping list
- 2 shallots shopping list
- Small tin of bamboo shoots shopping list
- 1 Tin coconut milk shopping list
- 300ml chicken stock shopping list
- Small bunch of chopped coriander shopping list
- 2 lime leaves shopping list
- Pinch sugar shopping list
How to make it
- Blitz down lime leaves, ginger, green chilli, garlic, lemongrass, shallots, and fish sauce in a blender until paste consistency
- In a hot pan, fry off the chicken until browned
- Add paste and cook for a further 3-4 minutes
- Add green bell pepper and bamboo shoots
- Add coconut milk and stock, and simmer for 30 minutes
- Finish by adding the coriander
- Serve with rice
