Almond-Orange Cookies

- 1 c. all purpose flour shopping list
- 1/2 c. cornstarch shopping list
- pinch of salt shopping list
- 3/4 c. unsalted butter ( room Temp.) shopping list
- 3/4 icing sugar shopping list
- 1 large egg, lightly beaten shopping list
- 2 tbsp. orange zest shopping list
- 1 pkg. (100 grms) fine ground almonds shopping list
- slivered almonds for garnish (optional) shopping list
How to make it
- Sift flour, salt, cornstarch into a mixing bowl. Mix and set aside.
- In another bowl, cream butter with icing sugar. Add egg and orange zest.Mix in ground almonds.
- Stir in flour mixture to form a dough.
- Press dough together and roll into a long tube, about 1 1/2 in. (4cm) in diameter.
- Wrap in parchment paper, then plastic wrap. Refrigerate for at least an hour or overnight.
- Preheat oven to 300 degreeF. Unwrap and slice cookies 1/4 in. thick, press 1 slivered almond ( if desired) into the center of each cookie.
- Bake on a parchment paper-lined pan for 12 - 15 minutes or until cookie edges are lightly browned. Cool on wire rack and store in an airtight container for up to 2 weeks.
