Ingredients

How to make it

  • Fine chop the onions
  • Fry in butter or oil till golden
  • Add drained sauerkraut, pepper to taste and bay leaves and cook over low heat about 15 minutes, then remove bay leaves
  • Cut the sausage into thin slices and add to mixture
  • Prepare the mashed potatoes per pkg directions and add in some fresh chopped parsley
  • Place mashed potatoes in a casserole dish
  • Top with the sauerkraut mixture
  • Mix remaining ingrdients for the topping ( mustard, yolks, cream fraiche, honey )
  • Spread over cabbage mixture
  • Bake 225C until well heated about 15 mins
  • Just before serveing sprinkle casserole with remaining fresh parsley

    wine kraut- depends on the brand, yes I have gotten this in goumet grocers and also have add some wine myself to the kraut!

    I make my own sauerkraut and its fermenting now and hoping in several weeks it will be ready and I'll post the recipe too!
