Crusty Sauerkraut casserole

- 2 med onions shopping list
- 2 Tbs melted butter or oil shopping list
- 1 Pkg sauerkraut prepared with wine shopping list
- pepper to taste shopping list
- 3 bay leaves shopping list
- 300 g Cabanossi - type of smoked salami sausauge or similar shopping list
- 1 Pkg mashed potatoes ( for 4 servings ) or make your own recipe shopping list
- 2 Tbs sharp mustard shopping list
- 3 egg yolks shopping list
- 3 Tbs creme fraiche shopping list
- 2 Tbs honey shopping list
- 1 bunch parsley chopped shopping list
How to make it
- Fine chop the onions
- Fry in butter or oil till golden
- Add drained sauerkraut, pepper to taste and bay leaves and cook over low heat about 15 minutes, then remove bay leaves
- Cut the sausage into thin slices and add to mixture
- Prepare the mashed potatoes per pkg directions and add in some fresh chopped parsley
- Place mashed potatoes in a casserole dish
- Top with the sauerkraut mixture
- Mix remaining ingrdients for the topping ( mustard, yolks, cream fraiche, honey )
- Spread over cabbage mixture
- Bake 225C until well heated about 15 mins
- Just before serveing sprinkle casserole with remaining fresh parsley
