Red Globe Chicken Salad

- 1 cup Red Globe grapes shopping list
- 6 oz Baked chicken breast shopping list
- 2 tbsp stone ground mustard shopping list
- 2 tbsp plain yogurt shopping list
- 1 tsp tarragon, Dried shopping list
- 1 small stalk celery, raw shopping list
- 1/4 cup diced scallions shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp white pepper shopping list
- 1/2 tsp dill seed shopping list
- 1/2 tsp onion powder shopping list
How to make it
- Cut the grapes in half and remove the seeds.
- Dice the cooked chicken.
- Mix the mustard yogurt and spices.
- Saute the scallions, onion and celery until slightly softened. Remove from heat when done and allow to cool for a few minutes.
- Toss the grapes, chicken and mustard mixture in a large bowl.
- Add the sauted vegetables and toss again.
- Chill for at least one hour before serving.
- Serving suggestions: Mixed field greens, high fiber low carb tortilla wrap, cooked wild rice, stuffed in a tomato.
