Country Nut Loaf

- 175g(6oz) butter or margarine shopping list
- 175g(6oz) castor sugar shopping list
- 3 large eggs shopping list
- 225g(8oz) self-raising flour, sieved shopping list
- 25g(1oz) ground almonds shopping list
- 75g(3oz) mixed chopped nuts shopping list
- 2 x 5ml spoons (2 teaspoons) milk shopping list
- glaze shopping list
- 2 x 15ml spoons (2 tablespoons) apricot jam, heated and sieved with shopping list
- I x 15ml (1 tablespoon) water shopping list
- assorted nuts to decorate shopping list
How to make it
- Preheat oven to 160c gas 3
- put all ingredients in a mixing bowl and mix well with a wooden spoon until well mixed
- pour into a greased and bottom lined 1kg (2lb) loaf tin
- cook on the middle shelf for 1 1/4 - 1 1/2 hours
- Leave in the tin for a few minutes before turning out. Brush the top of the cake with a little of the glaze, arrange nuts on top and brush with the remaining glaze.
