How to make it

  • Mix the mayo, sweet relish and chipotle and adobo in a bowl.
  • Coat both sides of fish with 1/2 tsp of of chipotle mayo and douse with the cajun spice on both sides and set on a paper towel.
  • In a sauce pan add 1 TBS olive oil and on medium heat saute the jalapeno , bell pepper and onion for 5 minutes and set aside in a bowl.
  • Add tomato and saute for 3-5 minutes, add the file powder and stir for 1 minute remove to a plate.
  • Add the remaining oil in same pan and allow to come up to temp on a med-high heat.
  • Add fish and saute for 2 minutes flip over and repeat.
  • On a plate put half of the onion and pepper mixture in the middle, add a piece of fish and put the tomatoes around the fish.
  • Place a dollop of tartar on each fish
