Blackened Tilapia With Chipotle Tartar Sauce

- 3 jalapeno seeded and veins removed sliced in 1/8 in strips shopping list
- 1/2 onion sliced in thin strips shopping list
- 1/2 red bell pepper sliced in 1/8 in strips shopping list
- 2 tilapia filets shopping list
- 3 TBS evoo shopping list
- 1 1/2 cups cherry tomatoes poke holes or slices in each shopping list
- 2 TBS cajun seasoning shopping list
- 1/4 cup mayo shopping list
- 1 tsp sweet relish shopping list
- 1 chipotle chopped finely shopping list
- 1 tsp adobo sauce shopping list
- 1/2 tsp file powder shopping list
How to make it
- Mix the mayo, sweet relish and chipotle and adobo in a bowl.
- Coat both sides of fish with 1/2 tsp of of chipotle mayo and douse with the cajun spice on both sides and set on a paper towel.
- In a sauce pan add 1 TBS olive oil and on medium heat saute the jalapeno , bell pepper and onion for 5 minutes and set aside in a bowl.
- Add tomato and saute for 3-5 minutes, add the file powder and stir for 1 minute remove to a plate.
- Add the remaining oil in same pan and allow to come up to temp on a med-high heat.
- Add fish and saute for 2 minutes flip over and repeat.
- On a plate put half of the onion and pepper mixture in the middle, add a piece of fish and put the tomatoes around the fish.
- Place a dollop of tartar on each fish
