Southwest Tilapia In A Mango Creme

- 2 tilapia filets shopping list
- 2 TBS southwest seasoning shopping list
- 1 1/2 cups of cherry tomatoes shopping list
- 1/2 cup diced mango shopping list
- 1/2 lime shopping list
- 1/2 onion diced shopping list
- 4 lg serranos diced shopping list
- 1 cup cherry tomatoes sliced in half shopping list
- 3 TBS evoo shopping list
- 1/4 cup of heavy whipping cream shopping list
How to make it
- Generously season fish with southwest seasoning and set on a plate.
- In a sauce pan heat 1 TBS evoo and on a med heat saute the onion and serrano for 5 minutes. Add the tomatoes and saute for another 4 minutes then set pan off to the side.
- In another pan add the remaing oil and on a med -high heat bring up temp and add the fish. Cook for 2 minutes then flip fish and repeat.
- Remove fish and add creme and mango to the pan and bring to a boil and remove at once.
- Place equal portions of tomato and onion mixture on a plate, place fish on top of mixture and spoon over sauce.
- Squeeze fresh lime juice over the top.
