How to make it

  • Generously season fish with southwest seasoning and set on a plate.
  • In a sauce pan heat 1 TBS evoo and on a med heat saute the onion and serrano for 5 minutes. Add the tomatoes and saute for another 4 minutes then set pan off to the side.
  • In another pan add the remaing oil and on a med -high heat bring up temp and add the fish. Cook for 2 minutes then flip fish and repeat.
  • Remove fish and add creme and mango to the pan and bring to a boil and remove at once.
  • Place equal portions of tomato and onion mixture on a plate, place fish on top of mixture and spoon over sauce.
  • Squeeze fresh lime juice over the top.
