How to make it

  • Separate whites from yolks while cool and bring them to room temperature before whipping.
  • Sift together the first 4 ingredients and set aside.
  • Whip egg whites 3/4 the way to making peaks( frothy but not stiff ).
  • Add cream of tartar and salt and continue mixing.
  • Slowly pour in sugar and beat slowly until graininess is gone.
  • Fold in dry ingredients in three portions, mixing 15 times after each addition or until moistened/mixed.
  • Do not over mix.
  • Spoon into ungreased angel's food pan.
  • Tap down pan on the countertop to bring up any bubbles before baking.
  • Bake at 375 degrees for 35 to 40 minutes.
  • When done, set upside down in the pan to cool at least an hour before removing from pan.
