Stumps Chocolate Angels Food Cake

- 1c sifted cake flour shopping list
- 1 1/2c sifted powdered sugar shopping list
- 1/4c cocoa shopping list
- 1T instant coffee shopping list
- 1doz egg whites(1 1/2c) shopping list
- 1/2tsp salt shopping list
- 1 1/2tsp cream of tartar shopping list
- 1c granulated sugar shopping list
How to make it
- Separate whites from yolks while cool and bring them to room temperature before whipping.
- Sift together the first 4 ingredients and set aside.
- Whip egg whites 3/4 the way to making peaks( frothy but not stiff ).
- Add cream of tartar and salt and continue mixing.
- Slowly pour in sugar and beat slowly until graininess is gone.
- Fold in dry ingredients in three portions, mixing 15 times after each addition or until moistened/mixed.
- Do not over mix.
- Spoon into ungreased angel's food pan.
- Tap down pan on the countertop to bring up any bubbles before baking.
- Bake at 375 degrees for 35 to 40 minutes.
- When done, set upside down in the pan to cool at least an hour before removing from pan.
