Spiced Chick Peas

- 6 oz chick peas, dried, soaked shopping list
- 3 pt water shopping list
- 2 tablespoon oil shopping list
- 2 each onions, diced shopping list
- 1/2 teaspoon chili powder shopping list
- 1 teaspoon coriander shopping list
- 1 teaspoon ginger, fresh, minced shopping list
- 1 teaspoon cumin shopping list
- 2 each bell peppers, red or green, diced shopping list
- 4 tablespoon tomato paste shopping list
- 1/2 pt stock shopping list
- 1 lemon juice, to taste shopping list
- 1 salt, to taste shopping list
- 1 pepper, to taste shopping list
How to make it
- After soaking, drain the chick peas. Cook in fresh water for 60 minutes until tender, drain & reserve liquid.
- Heat oil in large skillet. Fry gently the onion together with the spices for 5 to 7 minutes. Add the bell peppers & chick peas. Dissolve tomato paste into the stock & add to the skillet. Cook for 10 minutes. Taste for seasonings. Add lemon juice & salt & pepper.
- Serve over rice or pasta.
