Ingredients
  • 2 cups all purpose flour
  • 1 1/4 cups sugar
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoons salt
  • 2 cups grated carrots
  • 1/2 cup raisins
  • 1/2 cup shredded coconut
  • 1/2 cup pecans
  • 3 eggs
  • 1 cup canola
  • 1 medium tart apple, peeled and shredded
  • 2 teaspoons vanilla extract

Directions
  1. In a large bowl. combine first 5 ingredients.
  2. Stir in next 4 ingredients.
  3. Combine next 4 ingredients; stir into dry ingredients just until moistened.
  4. Spoon into greased pr paper lined mufin cups.
  5. Bake at 350 degrees for 15 to 18 minutes
  6. Yield: about 18 muffins..

Sounds yummy. You must have read my mind, I am in a mood for muffins this morning.


These are going to join our breakfast line up. I'm baking three kinds and freeze the extras to be pulled out as needed. This will go along with the applesauce muffin and the raisin bran muffin rotation.


These are DELICIOUS! We love muffins in the morning with a cuppa steamin' hot coffee! This is a wonderful recipe!
