How to make it

  • Cut scallops in half side-ways. Dry on paper towels, then dust lightly with flour (put flour in a sifter and lightly sift it on scallops).
  • Heat butter in a skillet, add garlic and mix. Add scallops and sauté until they are lightly brown.
  • Stir in fresh tomatoes, parsley and lemon juice. Heat through and season with salt and pepper.
  • Enjoy!
