Garlic Soup New Orleans

- 2 lbs onions rough chopped shopping list
- 2 cups peeled garlic chopped shopping list
- 2 Tbs each olive oil and butter shopping list
- 1 1/2 qts chicken stock shopping list
- 1 prepared bouquet garnet ( fresh thme, parsley stems and bay leaf tied together ) shopping list
- 2 cups French bread, day old and dried shopping list
- 1 cup half and half or part milk and part cream shopping list
How to make it
- In a large heavy duty pot, melt butter and oil and slow cook over low heat both onions and garlic at least 30 mins until onions are soft and golden
- Then add stock and bouquet garni and bring to a boil
- Add the bread and simmer 10 mins to soften bread
- Remove bouquet garni and either hand blend soup or blend in batches in a blender
- Place soup through a medium strainer ( I did not do this and soup waas fantastic )
- Whisk and season to taste.
- If too thick, thin if desired with the cream
