Chicken in Mole Sauce

- 4 TB olive oil shopping list
- 3 cloves garlic, minced shopping list
- 6 chicken hindquarters shopping list
- 1 onion, finely chopped shopping list
- 1 green bell pepper, finely chopped shopping list
- 3 jarred pimentoes, finely chopped shopping list
- 2 tomatoes, peeled, seeded and chopped shopping list
- 2 TB New Mexico chili powder shopping list
- 2 ½ c. chicken stock shopping list
- ¼ c. raisens shopping list
- ½ tsp. cumin shopping list
- ¼ tsp. nutmeg shopping list
- ¼ tsp. ground cloves shopping list
- ¼ tsp. ground cinnamon shopping list
- ½ tsp. salt shopping list
- ¼ tsp. black pepper shopping list
- 1 tsp sugar shopping list
- Grated rind of 1 orange shopping list
- 2 squares unsweetened chocolate shopping list
How to make it
- In a large skillet, heat olive oil and cook garlic just slightly to flavor the oil; add chicken and brown. Remove chicken and place in a casserole or 9 x 13 pan. In remaining fat, cook the onion, green pepper, pimento, and tomato over medium-low heat for 10 minutes. To the onion mixture add chili powder and blend well. Add broth, raisens, cumin, nutmeg , cloves, cinnamon , salt, pepper, sugar and orange rind. Simmer covered 30 minutes. Add chocolate and stir until melted.
- Spoon sauce over chicken and bake covered at 350* for 1 hour or until chicken is tender.
