How to make it

  • 1.Heat oven to 350. Grease a baking sheet.
  • 2. In large bowl mix together the masa, lard, baking powder, salt, 1/2 cup of cheese and the egg yolks. The mixture should be the consistency of a medium-soft cookie dough.
  • 3.Divide into 20 balls, flatten them into about 2 inch disks, then pinch up a 1/4-inch-high border all around. Arrange them on the baking sheet, then bake until slightly brown and crispy, about 17-20 minutes.
  • 4. While the sopes are baking, warm the black beans and mush them slightly with a potato masher. Almost like re-fried but not quite that much.
  • 5. Spoon beans onto sopes, then top with a little chopped onion, a spoonful of salsa, and a couple pieces of avocado. Sprinkle them with the remaining cheese and cilantro.
  • 6.Then Enjoy!!

    Sopes are small disc shaped, thick tortilla type things...I wish I could explain it better! You can top them with whatever sounds good to you. Masa Harina is a flour like powder used to make masa. It's made with sun or fire dried corn kernels that have been cooked in limewater (water mixed with calcium oxide). After having been cooked, then soaked in the limewater overnight, the wet corn is ground into masa harina. I know they sell it at most local grocery stores by the baking isle or if they have an ethnic isle it would be there.

    I remember these in a cafe when I was young. Very yummy kind of like a tamale. I lived where I could see "Tabletop Mountain, and I associated the two because of the shape of the sope.

    You can also use whatever topping you like for these, we like re-fry beans, sourcream, lettuce, tomato sauce, steak....etc =)
