Another Bistro Chicken

- 2 tb butter shopping list
- 2 tb olive oil shopping list
- 4 boneless chicken breasts shopping list
- kosher salt shopping list
- pepper shopping list
- 6 shallots, chopped shopping list
- 1 tsp chopped garlic in virgin olive oil shopping list
- 1 14 oz can diced tomatoes with garlic, oil, and basil shopping list
- 1 10 oz can condensed French onion soup shopping list
- 1 tsp thyme shopping list
- 4 slices swiss cheese shopping list
How to make it
- I do this in an electric skillet, as I find one skillet meals preferable.. If you choose, you can brown it on the stove top and then bake it at 375F in your oven. The directions are written for the electric skillet method.
- Place your skillet on 350F and butter and oil mixture.
- Liberally sprinkle the washed chicken breasts with kosher salt and pepper.
- Add 1 tsp of chopped garlic in virgin olive oil to the skillet and brown the chicken breasts in the mixture; about 5 minutes.
- Remove the chicken breasts to a paper plate.
- Add the shallots and cook for 3 minutes. Add the diced tomatoes. Cook another 3-4 minutes. Add the French onion soup and thyme. Continue cooking another 5 minutes to further condense the mixture.
- Increase skillet temperature to 375F.
- Return the chicken breasts to the skillet. Heap the tomato mixture over the top of the breasts using a slotted spoon, Cook for 10 minutes.
- Uncover and add a slice of Swiss cheese to each chicken breast; over the tomato/onion mix. Cover and cook an additional 10 minutes while the cheese melts into the blend.
- Serve.
- This dish goes well with a side of buttered noodles or rice. My personal favorite is Uncle Bens Long and Wild Rice (the 90 second microwave variety) with steamed sugar peas on the side.
