Moist Blueberry Muffins

- 2 cups all-purpose flour shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon baking soda shopping list
- 1/2 teaspoon baking powder shopping list
- 2 eggs shopping list
- 1 cup granulated sugar shopping list
- 1/2 cup canola oil shopping list
- 1/2 teaspoon vanilla extract shopping list
- 1 cup sour cream, not low fat shopping list
- 1 cup blueberries, lightly dredged in flour shopping list
- NOTE: You can substitute any berry for the blueberries and they still come out tasting delicious. shopping list
How to make it
- Preheat oven to 400 degrees F.
- Use paper muffin liners or grease 24 muffin cups. Either way it doesn't matter.
- Sift together dry ingredients.
- Place all pre-measured ingredients near the mixer.
- Beat eggs then gradually add sugar while beating.
- Continue beating while slowly pouring in oil.
- Stir in vanilla.
- Mix dry ingredients into wet ingredients, alternating with sour cream.
- Gently fold in blueberries or any other berry.
- Scoop batter into prepared muffin cups, filling each about 2/3 full.
- Bake for at least 20 minutes but you may find it necessary to bake them a little bit longer. It depends on your oven and altitude.
