Scallop Po Boy with Spicy Mayo

- 1/3 cup light mayo shopping list
- 1 garlic clove, minced shopping list
- 1 tablespoon fresh lemon juice shopping list
- lemon wedges shopping list
- 1 1/2 teaspoon paprika shopping list
- hot sauce to taste shopping list
- coarse salt and ground pepper shopping list
- 1/4 cup plain breadcrumbs shopping list
- 1 tablespoon flour shopping list
- 1 pound bay scallops, patted dry shopping list
- 1/2 cup vegetable oil shopping list
- 4 hot dog buns shopping list
- lettuce leaves shopping list
How to make it
- In a small bowl, combine mayo,, garlic, lemon juice, 1 teaspoon paprika, and hot sauce
- Season with salt and pepper
- Set spicy mayo aside
- In a medium bowl, combine breadcrumbs, flour,and remaining paprika
- Season with salt and pepper
- Add scallops, and toss to coat
- In a medium nonstick skillet, heat oil over medium-high heat
- Working in two batchews, fry scallops, tossing occasionally, until golden and cooked through, 2-3 minutes
- Using a slotted spoon, transfer scallops to a paper towel lined plate, season with salt
- Spread inside of buns with spicy mayo and divide scallops evenly on buns
- Top with lettuce
- serve with lemon wedges
