Lime N Coconut Chicken Stirfry

- 1 cup coconut milk shopping list
- 2 tsp soy sauce shopping list
- 1/2 tsp chili powder shopping list
- 1/2 tsp ground ginger shopping list
- 2 garlic cloves, crushed shopping list
- juice & zest of 1 lime shopping list
- 1 tsp sugar shopping list
- 2 tbsp vegetable oil shopping list
- 10 baby carrots, split in half lenghways shopping list
- 1/2 bell pepper de-seeded and cut into strips shopping list
- 1 small onion, thinly sliced shopping list
- 1 handful of snowpeas shopping list
- 2 chicken breasts, cut into bitesize pieces shopping list
- 1 tbsp fresh dill shopping list
How to make it
- Combine the coconut milk, soy sauce, chili powder, ginger, garlic, lime and sugar in a bowl.
- Set aside.
- Pre heat frying pan to a high heat, once piping hot then reduce to med-low.
- Stir fry the vegetables in vegetable oil for just 3-4 minutes ( to maintain some crunch.)
- Meanwhile, place coconut milk mixture into a saucepan and boil it over a medium heat for 5 minutes so that it will reduce and thicken slightly.
- Stir occasionally.
- Add the chicken to the vegetables, reduce the heat slightly, and stir fry everything for 5 minutes.
- Add the reduced coconut milk. Bring to the boil and simmer for a final 5 minutes, or until chicken it cooked thoroughly.
- Sprinkle over the dill, and serve the dish with some rice.
