How to make it

  • In a large glass measuring cup,add cold water,lemon zest,apricots and Bay leaf,set aside.
  • Melt butter,or heat ghee or oil in a saucepan over medium heat (with a tight fitting lid),add garam masala and cardamom,toast spices one minute.
  • Add onion and salt,saute until soft,then add the mint or parsley etc.Season to taste with the pepper.Add rice,stir and cook until rice browns about 6 minutes,continue to stir every few minutes.
  • Add the measuring cup with water and other ingredients.Bring to a simmer,reduce heat to low.Place a clean cotton dish towel over pot,then place lid over towel.Careful if you are using a gas stove.
  • I used a clothespin to keep towel edges on top of pot.
  • Cook ten minutes.Remove from burner set aside five more minutes,covered.Then fluff with fork.Remove lemon zest and bay leaf.
  • Serve with pistachios garnished on top.More fresh mint may also be sprinkled on top.
