Basmati Rice Pilaf With Apricots

- 1/2 cup dried apricots,chopped shopping list
- 2 wide strips,lemon zest shopping list
- 1 1/2 cups cold water or vegetable stock shopping list
- 3 tbls. unsalted butter,ghee,or achiote oil (the achiote will give it a nice color) shopping list
- 1 tsp. garam masala shopping list
- 1/4 tsp.ground cardamom shopping list
- 1 medium onion,diced shopping list
- 1 tsp.salt shopping list
- 1 cup basmati rice shopping list
- black pepper shopping list
- 1 Bay leaf shopping list
- 1/3 cup fresh mint,or parsley,or cilantro shopping list
- 1/4 cup toasted pistachios (unshelled) shopping list
How to make it
- In a large glass measuring cup,add cold water,lemon zest,apricots and Bay leaf,set aside.
- Melt butter,or heat ghee or oil in a saucepan over medium heat (with a tight fitting lid),add garam masala and cardamom,toast spices one minute.
- Add onion and salt,saute until soft,then add the mint or parsley etc.Season to taste with the pepper.Add rice,stir and cook until rice browns about 6 minutes,continue to stir every few minutes.
- Add the measuring cup with water and other ingredients.Bring to a simmer,reduce heat to low.Place a clean cotton dish towel over pot,then place lid over towel.Careful if you are using a gas stove.
- I used a clothespin to keep towel edges on top of pot.
- Cook ten minutes.Remove from burner set aside five more minutes,covered.Then fluff with fork.Remove lemon zest and bay leaf.
- Serve with pistachios garnished on top.More fresh mint may also be sprinkled on top.
