Champagne Party Cake

- 2/3 cup butter shopping list
- 1-1/2 cups granulated sugar shopping list
- 1 teaspoon pure vanilla extract shopping list
- 2-3/4 cups all-purpose flour shopping list
- 3 teaspoons baking powder shopping list
- 1 teaspoon salt shopping list
- 3/4 cup champagne - I use Asti Spumante shopping list
- 6 egg whites, stiffly beaten shopping list
- ICING: shopping list
- 2/3 cup whipping cream shopping list
- 1/4 cup sifted confectioners' sugar shopping list
- 3 Tablespoons champagne - Asti Spumante shopping list
How to make it
- Preheat oven to 350 degrees F or 175 C.
- Cream butter, add sugar and vanilla.
- Add flour, baking powder, salt and champagne.
- Fold in beaten egg whites.
- Pour batter into two 9 inch cake pans that have been greased and lightly floured.
- Bake until cake tester comes out clean or about 30 to 35 minutes.
- ICING:
- Whip cream until stiff.
- Beat in sugar and champagne.
- Spread smoothly over top and side of cake.
