How to make it

  • Preheat oven to 325 F.
  • In a large skillet brown the ground turkey in the olive oil. Drain fat from pan. Add garlic, tomato sauce, tomato paste and water. Mix well. Add the Italian seasons simmer until thick, about 5-7 minutes.
  • Meanwhile, beat the eggs and ricotta together. Add the parsley, salt and pepper mix well until blended.
  • Spray an 9-inch x 13-inch baking dish with cooking spray. Start by spreading meat mixture on the bottom of the pan, next a layer of zucchini; spread the zucchini with ricotta mixture top with spinach, mushrooms and shredded cheeses and meat mixture reserving enough for the top. Add any of the ricotta and spinach top with the remaining meat mixture and the rest of the shredded cheeses. Bake at 325 for 40 – 45 minutes or until browned and bubbly.
