How to make it

  • Cook noodles according to package directions, drain and season with salt and pepper.
  • Preheat oven to 350 degrees
  • Lightly butter large casserole dish
  • In skillet, Saute onions, bell pepper,garlic, and mushrooms in butter until tender(about 3 to 4 minutes)
  • Add spinach, broth, Parmesan Cheese, and cook 4 to 5 minutes over med low heat.
  • Stir in half and half and continue to cook for 2 to 3 minutes.
  • Season with salt and pepper.
  • Lay a row of three lasagna noodle on bottom of casserole dish.
  • Spread 1/3 of the spinach mixture over the noodles.
  • Top with 1/3 of the Italian Blend cheese and 1/3 of the cheddar cheese
  • Repeat layers ending with cheese
  • Pour any remaining juices from Spinach mixture over top.
  • Bake at 350 degrees 20 to 25 minutes or until lightly brown.
  • If desired, finish lasagna off by placing under broiler until lightly browned
  • Enjoy.

    Thank-you for this very nice sounding recipe.

    I like the Weight Watchers Smart Ones Lasagna Florentine very much,but, your recipe would surpass that in a New York minute.
