Chicken And Peppers In Vinegar Sauce

- 3 Tbs olive oil shopping list
- 8 bone-in skinless chicken thighs shopping list
- kosher salt and fresh ground pepper shopping list
- 1 large red bell pepper,stem and seeds removed,thinly sliced shopping list
- 1 large yelloe bell pepper,stem and seeds removed,thinly sliced shopping list
- 4 cloves garlic,chopped shopping list
- 1 Tbs tomato paste shopping list
- 1 c balsamic vinegar shopping list
- 2 Tbs clover honey shopping list
- 2 c low-sodium chicken stock or broth shopping list
- 1/4 c chopeed fresh flat-leaf parsley shopping list
How to make it
- Heat oil in a medium dutch oven over high heat until it shimmers.Pat the chicken dry with paper towels;season with salt and pepper. Place chicken in the pan,in batches,top side down. Cook till golden brown,4 mins. Turn over ,continue cooking 3 mins. Remove chicken to plate.
- Add peppers and cook,stirring occasionally,until slightly soft,about 5 mins. Add garlic,cook 1 min. Add tomato paste and cook 1 min. Add the vinegar and cook till reduced by half.
- Add honey and broth,season with salt and pepper,cook for 5 mins. Return chicken and accumulated juices to the pot. Reduce heat to medium,cover the pot and cook until the chicken is tender,about 15 mins. Remove chicken to platter.
- Cook sauce until slightly reduced,about 5 mins. Stir in parsley and pour sauce over chicken.
