Kentucky style scalloped potatoes

- 4-5 large potatoes shopping list
- 1/4 lb. butter (1 stick) shopping list
- salt and pepper, to taste shopping list
- 1 Vidalia or sweet onion, thinly sliced shopping list
- 1 tablespoon fresh parsley, minced shopping list
- 1/4 teaspoon paprika (optional) shopping list
- 2 tablespoons bread crumbs tossed in melted butter (optional) shopping list
How to make it
- Peel and thinly slice raw potatoes
- . Butter a casserole or pyrex dish. Spread the bottom evenly with a layer of potatoes, and season with salt, pepper, butter, a bit of onion chopped fine, if desired; sprinkle with a little flour.
- Follow with another layer of potatoes, onion, and seasoning.
- Continue layering potatoes until the dish is filled.
- For extra color and flavor, potatoes may be sprinkled with parsley, bread crumbs tossed in melted butter, with a dusting of paprika on top.
- Bake at 350 for one hour or til potatoes are done.
