Spinach with Little Meatball Soup

- 3 carrots diced or chopped shopping list
- 1 large onion chopped shopping list
- 1 red pepper chopped shopping list
- 3 cloves garlic chopped shopping list
- 1/4 cup olive oil shopping list
- 3 (32 oz) chicken broth shopping list
- (add a little more water to equal about 7 qts of liquids) shopping list
- 2-3 tbsp chicken base for soup (in jars) shopping list
- 3/4 cup parmesan cheese shopping list
- 1 (24 oz) frozen spinach pkg shopping list
- 3/4 cup dried Ane De Pepe pasta shopping list
- salt shopping list
- pepper shopping list
- 3 tbsp paprika shopping list
- 3 tbsp italian seasoning shopping list
- 1 tsp rosemary shopping list
- 1 tsp thyme shopping list
- Meatballs: shopping list
- 1 pkg (roll) ground white turkey meat (frozen section in stores) shopping list
- 1/4 pound chop meat shopping list
- 1/4 cup parmesan cheese shopping list
- salt, pepper to taste shopping list
- 2 tsp paprika shopping list
- 2 eggs shopping list
- 2 garlic cloves minced well shopping list
- 1/2-3/4 cup Italian breadcrumbs shopping list
How to make it
- In 8 quart Dutch oven or stock pan, heat oil
- Add onion, garlic, pepper, carrots, and caramelize (about 5 minutes)
- Add broth, water and chicken base
- Bring to boil
- Add all other ingredients (up to meatball's),
- Cover, lower to simmer and cook about 1 hour.
- Meanwhile in bowl:
- Mix, meats, cheese, seasonings and garlic
- Add enough breadcrumbs to hold together (not too soft but not too dry)
- Remove cover and roll the meat into about 1/2" size balls and drop into soup.
- Cover and cook an additional 20 minutes.
- Serve with toasted bread, or warm buttered bread and topped with Parmesan Cheese
