Ingredients

How to make it

  • In 8 quart Dutch oven or stock pan, heat oil
  • Add onion, garlic, pepper, carrots, and caramelize (about 5 minutes)
  • Add broth, water and chicken base
  • Bring to boil
  • Add all other ingredients (up to meatball's),
  • Cover, lower to simmer and cook about 1 hour.
  • Meanwhile in bowl:
  • Mix, meats, cheese, seasonings and garlic
  • Add enough breadcrumbs to hold together (not too soft but not too dry)
  • Remove cover and roll the meat into about 1/2" size balls and drop into soup.
  • Cover and cook an additional 20 minutes.
  • Serve with toasted bread, or warm buttered bread and topped with Parmesan Cheese

    A very different soup,I like how stated,the vegetables were cooked,bringing out their full flavour.
