Goats Cheese Olive and Potato Bread

- Little butter for greasing shopping list
- 190g self raising flour shopping list
- 190g potatoes, peeled and grated shopping list
- 1 medium onion, grated shopping list
- 1 pinch of salt and black pepper shopping list
- 1 tbsp fresh rosemary, plus a few sprigs to garnish shopping list
- 100g goat's cheese, crumbled shopping list
- 75g pitted black olives shopping list
- 1 large egg shopping list
- 1 - 2 tbls milk shopping list
- 2 tbls wholegrain mustard shopping list
How to make it
- Preheat oven to 200C/Gasmark 6 and grease and flour a loaf tin
- Sieve the flour into a large mixing bowl and add the potato, onion, salt and black pepper and stir to combine
- Mix in the rosemary, 90g of the cheese and 60g of the olives
- In another bowl, beat together the egg, milk and mustard and then mix into the flour mixture
- Stir until a rough dough forms
- Put dough evenly into the tin
- Dot with the remaining cheese and olives and rosemary sprigs
- Dust with a little flour and bake in the oven for about 45 minutes
- Serve warm
