How to make it

  • Okay, this is a no brainer so it’s quick and quick.
  • 1. In a skillet, cook the bacon, celery, garlic, onion and kielbasa in the olive oil until just done, not too done.
  • 2. Cook the pasta JUST al dante and drain. I rinse this in cold water to get rid of some of the starch and the starchy taste.
  • 3. Pre-heat oven to 350 deg F, rack in the middle.
  • 4. Put the milk, wine, cream cheese, chilies (if using) and grated cheddar cheese in a mixing bowl and fold until well mixed.
  • 5. Add everything else and fold until well mixed
  • 6. Transfer to your casserole dish cover & put in the oven to bake for 30 minutes
  • 7. Remove the cover and bake for 10 – 15 more minutes, every oven is different.
  • 8. Serve hot.
  • Serve with a crisp green salad with maybe some raw broccoli or cauliflower florets mixed in. The meat in this is meat but I like a nice dry white wine that doesn’t fight the Mac & Cheese taste. Good eating.
