Sorta Mac and Cheese

- • 500g elbow macaroni, ziti, rigatoni, rotini or whatever pasta you like. shopping list
- • 5 – 6 strips bacon, chopped. shopping list
- • 2 Tbs olive oil shopping list
- • 250g cream cheese shopping list
- • 250 – 500g sharp cheddar cheese, up to you. shopping list
- • 2 or 3 seeded chilies, chopped. You pick the type. Optional. shopping list
- • About 125g kielbasa, small cubes, you can use chorizo here. shopping list
- • 2 – 2 ½ cups milk, depends on cheese. shopping list
- • ¼ cup dry white wine. (more if you like but cut back on the milk). shopping list
- • 1 medium onion, chopped fine. shopping list
- • 2 med cloves garlic, chopped fine, to taste. shopping list
- • 1 cup fresh mushrooms, sliced. shopping list
- • ¼ cup pitted kalamata olives sliced (can use plane black olives if needed) shopping list
- • 1 tsp basil, chopped fine. shopping list
- • 1 tsp sweet paprika. shopping list
- • 1 stalk celery, thin cross cut. shopping list
How to make it
- Okay, this is a no brainer so it’s quick and quick.
- 1. In a skillet, cook the bacon, celery, garlic, onion and kielbasa in the olive oil until just done, not too done.
- 2. Cook the pasta JUST al dante and drain. I rinse this in cold water to get rid of some of the starch and the starchy taste.
- 3. Pre-heat oven to 350 deg F, rack in the middle.
- 4. Put the milk, wine, cream cheese, chilies (if using) and grated cheddar cheese in a mixing bowl and fold until well mixed.
- 5. Add everything else and fold until well mixed
- 6. Transfer to your casserole dish cover & put in the oven to bake for 30 minutes
- 7. Remove the cover and bake for 10 – 15 more minutes, every oven is different.
- 8. Serve hot.
- Serve with a crisp green salad with maybe some raw broccoli or cauliflower florets mixed in. The meat in this is meat but I like a nice dry white wine that doesn’t fight the Mac & Cheese taste. Good eating.
