Real lime cordial

- One lady who rang after a recent show told me she has a treeful of limes. Can you believe it - the lucky thing! She wanted some lime recipes so here's one I sent her for starters. shopping list

- At least a half-dozen large limes, sugar, boiling water and some food acid. shopping list
- This cordial is excellent served used with one part of the lime syrup mixed with 4 parts (or to taste) of chilled water, lemonade or soda water. shopping list
- Method: shopping list
- * 6 large limes (or 8 small) shopping list
- * 1.5kg (3lb) sugar shopping list
- * 4 cups boiling water shopping list
- * 1 tablespoon citric or tartaric acid shopping list
- Finely grate the lime rind, taking care not to include any of the pith. Squeeze the juice from the limes and set aside. shopping list
- Combine the lime rind, citric or tartaric acid, sugar and boiling water and mix well to dissolve the sugar. Add the reserved lime juice and mix through. Leave to stand until the mixture is cool (or overnight). Strain the mixture through a fine sieve (line the sieve with muslin if desired). shopping list
- Pour into sterilised bottles and seal. shopping list
