How to make it

  • Preheat oven to 400 degrees. Coat a large roasting pan with spray.
  • In large bowl,combine chicken,onion,garlic,lime juice,molasses,Worcestershire sauce,cumin,oregano,salt and black pepper. Toss to coat. (I marinate the chicken for several hours or overnight)
  • Transfer chicken to prepared pan and pour over any remaining marinade. Arrange olives over and around chicken in pan. Roast 30 to 35 mins (50 mins if bone-in),until chicken is cooked through.
  • The recipe does not call for leaving the chicken in the marinade any length of time,but I think it tastes better.

    Sounds good to me! I'd have to use the black olives though cuz Kalamatas tastes too salty to me! ;')
