Garlic Lime Chicken with Olives

- cooking spray shopping list
- 1 lb boneless,skinless chicken breasts (I have used bone- in and cook longer) shopping list
- 1 c diced onion shopping list
- 2 to 3 cloves garlic,minced shopping list
- 2 Tbs fresh lime juice shopping list
- 1 Tbs molasses shopping list
- 2 tsp worcestershire sauce shopping list
- 1-1/2 tsp ground cumin shopping list
- 1 tsp dried oregano shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp fresh ground pepper shopping list
- 1/2 c pitted and slice Greek olives,such as Kalamata(have used plain black and also green) shopping list
How to make it
- Preheat oven to 400 degrees. Coat a large roasting pan with spray.
- In large bowl,combine chicken,onion,garlic,lime juice,molasses,Worcestershire sauce,cumin,oregano,salt and black pepper. Toss to coat. (I marinate the chicken for several hours or overnight)
- Transfer chicken to prepared pan and pour over any remaining marinade. Arrange olives over and around chicken in pan. Roast 30 to 35 mins (50 mins if bone-in),until chicken is cooked through.
- The recipe does not call for leaving the chicken in the marinade any length of time,but I think it tastes better.

Sounds good to me! I'd have to use the black olives though cuz Kalamatas tastes too salty to me! ;')
