How to make it

  • In bowl,toss chicken with flour and 1 Tbs parsley. Season with salt and pepper,if desired. In Dutch oven over med-high heat,cook olive oil 30 seconds. In 3 batches,cook chicken 6 mins or till golden brown,turning once;remove pieces and set aside
  • Add leeks and garlic to Dutch oven. Cook 2 mins.,stirring occasionally. Add broth,stirring to scrape up browned bits. Increase heat to high;bring to a boil
  • Return chicken to pan. Add next 4 ingredients. Reduce heat to medium. Cover and let simmer 30 mins. Stir in beans and olives. Cook 5 mins or till heated through. Sprinkle with Romano cheese and remaining parsley.
  • For slow cooker: After browning chicken,combine all ingredients except zucchini,2 Tbs parsley and cheese in slow cooker on low heat. Cook 6 hours. Stir in zucchini;cook 1 hour. Sprinkle with parsley and cheese. before serving.
