Eggs sunny-side up

- 4 c broccoli florets. shopping list
- 12 cherry tomatoes halved. shopping list
- 4 big eggs. shopping list
- 1 c drained yoghurt. shopping list
- 6 tbs olive oil. shopping list
- 1 onion chopped. shopping list
- 3 cloves garlic chopped. shopping list
- 1 tbs dried oregano. shopping list
- salt and pepper to taste. shopping list
- parsley for garnish. shopping list
How to make it
- Cover broccoli florets with water in a pan and bring to a boil, cook on middle warm heat 5 minutes, drain in a colander and let cool down.
- Preheat oven t 180 C.
- Brush an ovenproof dish with 1 tbs olive oil and put broccoli florets on the bottom with in between the tomato halves.
- Now make 4 gaps and break the eggs in openings, be carefull to keep the yolks intact.
- Mix fetta cheese with the yoghurt, onion, garlic, add salt and pepper to taste.
- Spoon the yoghurt cheese mixture over the vegetables, take care not to cover the eggs.
- Sprinkle with the rest of the olive oil and the oregano.
- Bake 10-12 minutes or longer depending how you like your eggs.
- Garnish with parsley.
- Serve with a French baquette.
