crock pot italian beef and barley soup

- 1 boneless beef top sirloin steak (about 1 1/2 pounds) shopping list
- 1 TBS vegetable oil shopping list
- 4 medium carrots or parsnips, sliced 1/4 inch thick shopping list
- 1 cup chopped onion shopping list
- 1 tsp dried thyme leaves shopping list
- 1/2 tsp dried rosemary shopping list
- 1/4 tsp black pepper shopping list
- 1/3 cup pearl barley shopping list
- 2 cans (141/2 ounces each) beef broth shopping list
- 1 can (141/2 ounces ) diced tomatoes with italian seasoning, undrained shopping list
How to make it
- 1. cut beef into 1-inch pieces. heat oil over medium-high heat in large skillet; brown beef on all sides. set aside
- 2. place carrots and onion in the CROCK-POT slow cooker; sprinkle with thyme, rosemary and pepper. Top with barley and meat. Pour broth and tomatoes with juice over met. Cover, cook on low for 8 to 10 hours or on HIGH for 3 to 4 hours or until beef is tender.

This is great! The slow cooking really amped up the flavor. I cooked it on high for 4 hours. The only thing I did differently was add the barley half way through cooking, so in the last two hours of cooking. I find that works better as the pearl barl...more
