How to make it

  • 1. cut beef into 1-inch pieces. heat oil over medium-high heat in large skillet; brown beef on all sides. set aside
  • 2. place carrots and onion in the CROCK-POT slow cooker; sprinkle with thyme, rosemary and pepper. Top with barley and meat. Pour broth and tomatoes with juice over met. Cover, cook on low for 8 to 10 hours or on HIGH for 3 to 4 hours or until beef is tender.

    This is great! The slow cooking really amped up the flavor. I cooked it on high for 4 hours. The only thing I did differently was add the barley half way through cooking, so in the last two hours of cooking. I find that works better as the pearl barley cooks fast and can soak up too much liquid if left to cook for too long. Other than that a delicious recipe! :)

    Mmmmmmmmm,have been using my slow cooker more and looking for recipes. This sounds great! What do you think of adding some lentils? I love lentils and barley. Thanks for the post.
