Baked Potato Eggs

- 2 large baking potatoes shopping list
- 2 Tbs butter shopping list
- 1/4 cup grated parmesan cheese shopping list
- 2 precooked turkey sausages, diced shopping list
- 4 large eggs shopping list
- (I salted and peppered as well) shopping list
How to make it
- Heat oven to 400F.
- Scrub the potatoes and pierce each with the tines of a fork. Bake until for-tender, about 45 minutes.
- Carefully cut each potato in half. Scoop out the insides and stir in the butter and cheese. Fold in the sausages. Spoon the mixture back into the potato halves, creating a hollow in each center. Break one egg into each hollow.
- Arrange on a baking sheet (I put aluminum foil on the sheet and sprayed the foil with cooking spray). Cook 10 to 15 minutes until set.
- **I'm not certain an egg will set in 10 minutes at 400F. Another reason why I raised my oven temperature. There was a tip with this recipe: Save time by poaching the eggs while the potatoes bake. Then slide the poached eggs on top instead of baking the eggs with the potatoes. (This sounds like a good tip to me!)
