Mini Irish Soda Breads

- 4 c flour shopping list
- 2/3 c sugar shopping list
- 1 Tbs baking powder shopping list
- 1 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 3/4 c dried currants shopping list
- 1 c buttermilk shopping list
- 3/4 c shredded cheddar cheese shopping list
- 3 eggs shopping list
How to make it
- Preheat oven to 325 degrees. Coat large baking sheet witrh cooking spray. In large bowl,combine flour,sugar,baking powder,soda,salt,currants and cheese Stir in buttermilk and 2 eggs until dough forms.
- On generously floured surface,knead dough till smooth,about 2 mins. Divide dough into 8 evenly sized pieces;shape each piece into round loaf. Place 2 to 3' apart on baking sheet.
- With kitchen scissors or serrated knife,cut 1/2" deep x into top of each loaf. Lightly beat remaining egg;brush over tops
- Bake 25 mins or till loaves are goldenand sound hollow when tapped on the bottom.
- Transfer from baking sheet to rack ;let cool completely.
