How to make it

  • Season chicken pieces with salt and ground black pepper,if desired. In large skilet over med-high heat,cook olive oil 30 secs. or till heated. In 2 batches,cook chicken 8 mins or till browned on all sides,turning occasionally. Remove chicken and set aside. Remove and discard all but 2 Tbs of pan drippings.
  • In same skillet,over med-high heat,cook onions,peppers, and garlic in reserved drippings 3 mins. or till onions are temder,stirring occasionally. Stir in prosciutto di Parma,tomatoes,olives,basil and rosemary. Return to skillet.
  • Reduce heat to medium. Cover and let simmer 40 mins or till termometer inserted in chicken,not touching bone,reads 165 degrees,basting occasionally. Garnish with rosemary sprig.
