Roma Style Chicken

- 1 whole broiler chicken,cut in 8 pieces (about 4 lbs) shopping list
- 1 Tbs olive oil shopping list
- 1 med. onion,peeled and chopped shopping list
- 1 green pepper,seeded and diced shopping list
- 2 cloves garlic,peeled and chopped shopping list
- 4 slices prosciutto di Parma,chopped(about 2 oz) shopping list
- 1 can (14.5 oz) diced tomatoes with Italian herbs shopping list
- 1/2 c country-style olives shopping list
- 1 Tbs chopped fresh basil shopping list
- 1/2 tsp chopped fresh rosemary shopping list
How to make it
- Season chicken pieces with salt and ground black pepper,if desired. In large skilet over med-high heat,cook olive oil 30 secs. or till heated. In 2 batches,cook chicken 8 mins or till browned on all sides,turning occasionally. Remove chicken and set aside. Remove and discard all but 2 Tbs of pan drippings.
- In same skillet,over med-high heat,cook onions,peppers, and garlic in reserved drippings 3 mins. or till onions are temder,stirring occasionally. Stir in prosciutto di Parma,tomatoes,olives,basil and rosemary. Return to skillet.
- Reduce heat to medium. Cover and let simmer 40 mins or till termometer inserted in chicken,not touching bone,reads 165 degrees,basting occasionally. Garnish with rosemary sprig.
