Super Simple Linguica and Potatoes

Linguica, a Portuguese sausage, is sliced and sauteed with chunks of potato and onion for a flavorful side dish...or main, if you like! My Mom used to make this often, either stovetop or wrapped in foil and tossed on the grill. Read more These days you can find turkey linguica for less fat, but there will be less drippings on the potatoes so I sometimes add some paprika for color, as regular linguica dripping will turn the potatoes somewhat orange. Ingredients
- 1 tbsp olive oil (about - you can get away with less if using regular linguica, but will need a good tbsp if going for the lower fat turkey linguica as there will be much less drippings) shopping list
- 3 large potatoes, peeled and diced shopping list
- 1 lb. linguica, sliced shopping list
- 1/2 cup onion, diced shopping list
- salt & pepper to taste shopping list
How to make it
- Heat oil in a large skillet over medium heat.
- Add potatoes, linguica and onions and cook, stirring occasionally, until potatoes are done - about 20 minutes.
- Season to taste with salt & pepper.
