Ingredients

How to make it

  • Peel, core and cut apples into thin wedges. See Photo
  • Place in a large iron skillet with enough salted water to fill.
  • Cover and cook on medium high heat. Leave lid partly open to vent steam and prevent boilover. See Photo
  • Cook until fork tender but not mushy. Drain the water and return skillet to heat.
  • Add sugar and butter pats on top of apples See Photo. Turn GENTLY to coat.
  • Cook uncovered until sugar begins to carmelize See Photo. Stir GENTLY until browned on all sides.
  • Remove from skillet and place in an oven proof dish so they can be kept warm.
  • Serve when ready.

Lid Left Ajar   Close
Drain and Refire   Close
Done   Close

    I dearly love 'fried' apples no matter how they are cooked. Thanks for the recipe and reminder that it's time to 'git out the ol' skillet'. I will admit that the first time I made this - it was a lumpy applesauce. Just bought really good cooking apples (on sale, no less)and will make tonight and report , thanks!

    We have been doing this forever. Just realized I had never posted it. We don't add much to them. Not trying to make Apple Pie filling. The cooking times are approximate because the variety of apple can change the times significantly.

    A couple of warnings.

    Pick a cooking variety of apple. Ones that hold their consistency when cooked. Granny Smith for tart, Gala gives mild, etc.

    Handle and stir as little as possible. It is really easy to end up with applesauce if you have too much enthusiasm.
