Parmesan Pan Fried Tomatoes

- 1 cup all purpose flour shopping list
- 1 tablespoon onion powder shopping list
- 2 teaspoon granulated garlic shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 1 cup parmesan cheese grated shopping list
- 1 cup Japanese breadcrumbs shopping list
- 12 slices tomatoes sliced 1/2" thick shopping list
- 2 eggs shopping list
- 2 tablespoons Dijon mustard shopping list
- 3 tablespoons olive oil shopping list
How to make it
- Combine flour, onion powder, granulated garlic, salt and pepper then mix well.
- In separate bowl combine bread crumbs and parmesan.
- In third bowl combine eggs and mustard.
- Dip tomato slices in flour then dust off excess.
- Dip tomatoes in egg mixture letting excess drip off.
- Finally dip in parmesan mixture pressing mixture onto slices for good coverage.
- Repeat until all slices are breaded.
- These should be stored in a single layer dusted lightly with extra crumbs.
- Heat olive oil in nonstick frying pan over medium high heat.
- Place 3 slices in pan and let cook 2 minutes on each side until just golden brown.
