Ingredients

How to make it

  • Line a loaf pan with non-stick paper .
  • Pre heat the oven at 180 deg C .
  • Cream together butter and sugar .
  • Add eggs one by one and beat well .
  • Fold in the flour .
  • Add the yoghurt . Mix well .
  • Pour half of the batter into the pan .
  • Arrange the diced mangoes over the mixture .
  • Top with the remaining batter .
  • Sprinkle top with prepared sugar and bake for one hour or until a toothpick inserted in the middle of the pan comes out clean .

    Cholina: Why didn't you post this about three weeks ago? Mango season in Samoa is over. No more mangoes for nine months. This does sound delicious. RJ
