- 2 tlbs. corn oil shopping list
- 1 med. onion chopped shopping list
- 2 cloves garlic chopped shopping list
- 1 jalapeno pepper (2 or 3 if you like it hot) minced shopping list
- 1 1/2 tlbs chili powder shopping list
- 1 tsp. ground cumin shopping list
- salt to taste shopping list
- 5 whole peeled canned tomatoes chopped and 1/4 c. of juice from can shopping list
- 3/4 lb. lean ground sirloin beef. (or some times i use ground turkey) shopping list
- 1/3 c. chicken broth shopping list
- 1/4 c. cilantro leaves roughly chopped shopping list
- dozen tortillas, shopping list
- toppings shopping list
- 1/4 head romaine or iceburg thinly sliced shopping list
- 3 medium tomatoes cored and diced shopping list
- 2 hass avocados diced shopping list
- 1 1/2 c. shredded monteray jack cheese shopping list
How to make it
- heat the oil, add onions, garlic, jalapenos, and spices, season with salt and cook over medium heat stirring occasionally until done, about 10 min.
- increase heat to meadium-high add tomatoes and their juices and boil to thicken about 2 min.
- stir in the beef and chicken broth, adjust heat so mixture simmers and cook until beef is ccoked through and mixture thickens, about 15 min,
- stir in cilantro just before done
- serve with rice and beans, enjoy
