How to make it

  • Preheat oven to 350 degrees.
  • Sift together first 4 ingredients into a large bowl. Set aside.
  • In a large mixer bowl, beat together the butter, brown sugar, and granulated sugar until light and fluffy. Add instant pudding, mixing well. Add eggs, Irish Cream extract, (and instant coffee granules, if desired) mixing until well blended. Scrape down sides of bowl as necessary. Slowly add flour, mixing well. Stir in chopped hazelnuts and milk chocolate chips until well blended.
  • Using a standard ice cream scoop (2 oz), or rounded tablespoons, drop dough onto an un-greased baking sheet.
  • For 2 oz cookie, bake at 350 degrees for 16-18 minutes. For rounded tablespoon-size cookies, bake 12-14 minutes. After one minute, transfer from pan to wire rack to cool.

    I've made many purchases from Spice Barn and have been very happy with their products. I get my cinnamon, nutmeg, and all of my extracts from them...the spices are very fresh, and the extracts have "authentic" flavor. I've been very pleased.

    Mornin Shawn... on the two resources you have listed to purchase the extract, have you personally made purchases from either one of them? The reason I'm asking is that I'm looking for a trusted source to buy saffron. I want to try my hand at making Paella, and I don't want to use saffron that's had other junk added to it.
