How to make it

  • clean fish as required and keep whole
  • Combine lemon juice, garlic, coriander, chives, mint and salt in a blender
  • add salt to taste
  • slit the belly of the fish to create a pocket
  • rub with olive oil, inside and out, then season with salt and pepper
  • use herb mixture and stuff the cavity
  • use the remaining juices running out to rub the outside of the fish lightly
  • wrap in foil and throw on the coils :)
  • serve with baked bread and toss salad

    Always a pleasure. I think coriander must be one of the most underestimated herbs around.
