Herbed Fish

- 1 large firm fleshed fish (yellow tail or snoek) shopping list
- 2 tbs garlic, chopped shopping list
- 4 tbs coriander, chopped shopping list
- 4 tsb chives, chopped shopping list
- 1 tsb mint, chopped shopping list
- 6 tbs crushed almonds shopping list
- 250ml lime juice shopping list
- 250ml extra virgin olive oil shopping list
- salt to taste shopping list
How to make it
- clean fish as required and keep whole
- Combine lemon juice, garlic, coriander, chives, mint and salt in a blender
- add salt to taste
- slit the belly of the fish to create a pocket
- rub with olive oil, inside and out, then season with salt and pepper
- use herb mixture and stuff the cavity
- use the remaining juices running out to rub the outside of the fish lightly
- wrap in foil and throw on the coils :)
- serve with baked bread and toss salad
