- • 2 regular, ordinary, everyday corn tortillas. shopping list
- • 2 to 5 Tbs of cooked pinto beans or refried beans (most other beans work okay). shopping list
- • 1 small tomato, chopped. shopping list
- • A bit of bell pepper, diced. shopping list
- • About 1 Tbs of pre-cooked bacon bits. I make up about ½ lb (250g) of this every three or four days and put in a sealed container in the fridge. It never lasts very long but I’ve never had any spoil. shopping list
- • A chili pepper, finely diced (your choice of kind). shopping list
- • 1 or 2 mushrooms, thin sliced. shopping list
- • 1 to 5 kalamata olives, seeded and chopped (depends on size). shopping list
- • About 3 Tbs cottage cheese (to taste) shopping list
- • 2 medium eggs, room temp. shopping list
- • A bit of what you find in the fridge, to taste. shopping list
- • salt and fresh ground pepper to taste. shopping list
- • A dash of parmesan cheese. shopping list
How to make it
- 1. Paint a plate with a little oil or spray with non stick stuff.
- 2. Get the tortillas wet, put them on the plate and into the microwave for 2mminutes on high.
- 3. Put the beans, tomato, bell pepper, chili pepper, cooked bacon and what you fond in the fridge that needs cooked in a bowl and fold together gently. You want to mix it but not blend it.
- 4. Spread this concoction on the tortillas and return to the microwave for 3 to 4 minutes, depending on how much you have and how well your nuclear furnace works.
- 5. While this is going on gently mix together the mushrooms, olives, cottage cheese and whatever you found in the fridge that doesn’t need to be cooked.
- 6. Remove the tortillas and concoction from the micro and spoon the cottage cheese, etc. mix evenly over the top.
- 7. Cook the two eggs to your liking, sunny side up, over easy, etc. and place them on top of the thing on the plate.
- 8. Salt and pepper to taste and sprinkle with Parmesan cheese.
- I usually do this kind of thing for breakfast or brunch but its okay for lunch and you don’t have to have the eggs. The Hidalgo always wants some finally chopped onion mixed in with the cottage cheese, etc. but, hay, he’s a Hidalgo.
