Smoky spiced eggplant

- 2 large eggplants shopping list
- 1 red onion finely diced shopping list
- 2 garlic cloves finely chopped shopping list
- 1 knob ginger peeled & grated shopping list
- 1 green chilli shopping list
- chilli powder 1/4 tsp shopping list
- 1/2 tsp garam masala shopping list
- 2 tsp ground cumin shopping list
- 2 teaspoons ground coriander shopping list
- salt & pepper shopping list
- 2 tomatoes diced shopping list
- freshly chopped coriander shopping list
- groundnut oil for cooking shopping list
How to make it
- Brush eggplants with oil place under heated grill
- Turn the eggplants every now & again you want the skins to blacken & the eggplant to deflate.
- When ready slit open eggplant be careful of steam
- scoop out inside
- chop contents roughly
- Heat some 1 tbsp of oil over medium heat
- Add onion, garlic & ginger fry until soft
- Add spices
- Add tomatoes & eggplant
- Simmer for 10 mins
- Season to taste
- sprinkle over fresh coriander
