How to make it

  • Brush eggplants with oil place under heated grill
  • Turn the eggplants every now & again you want the skins to blacken & the eggplant to deflate.
  • When ready slit open eggplant be careful of steam
  • scoop out inside
  • chop contents roughly
  • Heat some 1 tbsp of oil over medium heat
  • Add onion, garlic & ginger fry until soft
  • Add spices
  • Add tomatoes & eggplant
  • Simmer for 10 mins
  • Season to taste
  • sprinkle over fresh coriander

    I love this method of cooking eggplant. Roasting it whole in the skin gives the satiny, complex flavor so much dimension! The spice, garlic and ginger combination sounds fantastic. I will be sharing this recipe with my vegetarian sister and bro-in-law!
