Watermelon BBQ Sauce

- 6 pounds seedless watermelon -- rind removed shopping list
- 8 ounces tomato paste shopping list
- 1 tablespoon onion powder shopping list
- 1 tablespoon garlic powder shopping list
- 2 cups brown sugar -- packed shopping list
- 1/3 cup cooking sherry wine shopping list
- 2 teaspoons lemon juice shopping list
- 1 teaspoon liquid smoke shopping list
How to make it
- Cut watermelon into pieces and place in a saucepan over stove.
- Cook uncovered over medium heat, stirring occasionally, until melon is the consistency of applesauce (approx. 2-3 hours).
- Add remaining ingredients.
- Simmer uncovered over low heat for 2 hours.
- Allow to cool at room temperature before serving.
- Freeze unused sauce and enjoy over and over!
