Not quite curry

- SAUCE shopping list
- 250ml plain yoghurt shopping list
- 20ml cumin powder shopping list
- 15ml lemongrass paste shopping list
- 1 bunch of fresh coriander (fairly large) shopping list
- 3 curry leaves shopping list
- rind of 3 oranges shopping list
- 1kg mutton chunks (keep all bones on meat in tact) shopping list
- 2 large onions, chopped shopping list
- oil for cooking (olive oil or sunflower) shopping list
- 4 garlic cloves chopped shopping list
- 750ml tomato puree shopping list
- salt shopping list
- (add sugar if puree is bitter) shopping list
How to make it
- Mix all the sauce ingredients in a blender until smooth
- put meat in a shallow dish, rub sauce into meat and leave covered for 1 hour
- pout 20ml oil into a pressure cooker and heat.
- slow cook onions until soft
- add marinated meat to the onions, pour remaining sauce into the pot as well.
- add salt according to preference
- cook over low heat for one hour, occassionally adding warm water to keep your pot moist.
- add tomato puree (remember to add sugar if puree is bitter), turn up heat and allow to simmer for 10 minutes
- mash garlic, stir into mixture and cook for 5 minutes
- serve on Jamine rice
