Lemon Coconut Cake

- cake - shopping list
- 125g butter shopping list
- 2 tsp grated lemon rind shopping list
- 1 cup caster sugar shopping list
- 2 eggs shopping list
- 1/2 cup coconut shopping list
- 1/2 cups self-raising flour shopping list
- 1 cup sour cream shopping list
- 1/3 cup milk shopping list
- icing - shopping list
- 75g butter shopping list
- 3/4 cup icing sugar shopping list
- 1 tsp grated lemonn rind shopping list
- 1 tbsp lemon juice shopping list
- 1/2 cup coconut shopping list
How to make it
- Line and grease a deep 23cm round cake tin.
- Beat butter, rind and sugar together until very creamy. Beat in eggs, one at a time, until combined.
- Stir in coconut, sifted flour, sour cream and milk. Smooth into prepared pan.
- Cook in moderate oven at 180C for 1 hour (it usually doesn't take this long, it will begin to brown and will be firm in the middle)
- Stand for 5 minutes, before turning it on to a wire rack to cool completely.
- Icing - Beat butter until pain. Gradually beat in sugar, rind, juice and coconut until smooth.
- Spread cooled cake with icing, and sprinkle with shredded coconut to decorate.
