How to make it

  • Line and grease a deep 23cm round cake tin.
  • Beat butter, rind and sugar together until very creamy. Beat in eggs, one at a time, until combined.
  • Stir in coconut, sifted flour, sour cream and milk. Smooth into prepared pan.
  • Cook in moderate oven at 180C for 1 hour (it usually doesn't take this long, it will begin to brown and will be firm in the middle)
  • Stand for 5 minutes, before turning it on to a wire rack to cool completely.
  • Icing - Beat butter until pain. Gradually beat in sugar, rind, juice and coconut until smooth.
  • Spread cooled cake with icing, and sprinkle with shredded coconut to decorate.
