Potato Salad Roll

- 3 cups cold mashed potatoes shopping list
- 1/3 cup mayonnaise shopping list
- 2 tsp onion, chopped shopping list
- 2 tsp milk shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp paprika shopping list
- 3 tbsp fresh parsley, chopped shopping list
- - lettuce leaves - shopping list
- 6 hardcooked eggs, chopped shopping list
- 1/4 cup sweet green pepper, finely chopped shopping list
- 1/4 pimientos, finely chopped shopping list
- 2 tbsp mayonnaise shopping list
- 1/4 tsp salt shopping list
- - pinch of pepper - shopping list
How to make it
- In bowl; stir together eggs, green pepper, pimientos, mayonnaise, salt and pepper. Set aside.
- In separate bowl; stir together potatoes, mayonnaise, onion, milk, salt and paprika. Evenly spread on large sheet of waxed paper into 12 x 8 inch rectangle.
- Spread filling over top. Roll up, jelly-roll style, using waxed paper to aid rolling. Sprinkle with parsley and a little paprika. Cover and refrigerate for at least 2 hours or until chilled. Slice and serve on lettuce leaves.
