Gypsy Seafood Stew

- 1 large onion, chopped shopping list
- 6 rashers of bacon, chopped shopping list
- olive oil EVOO shopping list
- 2 large potatoes, cubed shopping list
- 3 large tomatoes, chopped shopping list
- ½ english cucumber, chopped shopping list
- 4 x 250 ml (1 litre) chicken stock shopping list
- 375 ml (11/2 c) white wine shopping list
- 1 kg fresh or frozen white fish fillets, cut in chunks shopping list
- ± 16 each: black mussels[still in their shells shopping list
- ± 2 doz prawns shopping list
- ground sea salt and black pepper shopping list
- 45 ml (3 tbsp) parsley, chopped shopping list
How to make it
- Sauté onion and bacon in oil over medium heat.
- Add vegetables and liquid and simmer until potatoes are
- cooked, yet firm.
- Add seafood, simmer for ± 10 min
- Season and add parsley..
- Serve in earthen ware bowls with spoons only
- Using your fingers adds to the fun
- Serve hot with crusty bread.
- Or on a bed of yellow rice
- A delicate extra dry white whine will work well here.
